

Zapekanka Cheesecake
Fresh cheese tvorog zapekanka (traditional Eastern European cheesecake) is a real delicacy and tastes much, much better than any cheesecakes made with regular fresh cheese. You don’t even need to add any flavour, just mix the fresh cheese with eggs, semolina and sugar. You can add a few raisins, but there won’t be any need for vanilla or cinnamon.
Ingredients:
250g of fresh cheese tvorog 14%
1 egg
3 tablespoons of sugar
1 pinch of salt
1 tablespoon of semolina
1 egg yolk for dabbing the top
1/3 cup of raisins
Cooking instructions:
Mix the fresh cheese, egg and sugar gently with a spoon instead of whipping it up with a blender or a food processor to preserve the fresh cheese’s unique texture and taste. Add 1 tablespoon of dry semolina. Add raisins to the fresh cheese and egg. Mix well. Coat the zapekanka baking mold with butter. Add the fresh cheese batter, press it down to compress it a little by the side walls of the mold. Place it in an oven preheated to 200ºC (400ºF). After about 15 minutes, when the top becomes dense, remove the zapekanka cheesecake from the oven and brush it with an egg yolk diluted in 1 tablespoon of water. Bon appétit!
